5 Ingredient Bacon Parmesan Frittata

Easy and healthy recipes can be simple and delicious! This frittata uses PAM® Spray Pump Avocado Oil and this non-stick cooking spray does it's job. The only ingredients are eggs, Parmesan cheese, bacon (or turkey bacon), plain Greek yogurt (milk or sour cream). Your breakfast, brunch, lunch, dinner (aka brinner!) just got WAY better! Use your cast iron skillet or any "stove-top to oven" safe pan.

  • 12 eggs
  • 6 strips bacon, diced into bite-sized pieces
  • 1 small onion, diced into bite-sized pieces
  • 1/2 cup plain Greek yogurt
  • 1 cup shredded Parmesan cheese
  • 15 sprays PAM® Spray Pump Avocado Oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat oven to 350F.
  • Heat a 10 inch cast iron pan or oven safe pan over medium heat on your stove top. Spray 15 sprays of PAM Spray Pump Avocado Oil in the pan. Add chopped onions and cook for 5 minutes or until they are starting to brown.
  • Add in the chopped bacon and continue to cook for 3-5 minutes until onions are browned and bacon is cooked through.
  • While the onions and bacon are cooking, mix together your other ingredients.
  • In a medium-sized bowl, whisk together eggs, Parmesan cheese, plain Greek yogurt, salt, and pepper.
  • Pour the egg mixture over the onion and bacon in the cast iron pan. Do not mix! Over medium heat, cook the frittata on the stove top for 3 minutes.
  • Then place the whole pan right in the preheated oven and bake for 15-18 minutes or until center is just set. Move the oven safe pan into the 350F preheated oven and bake until the middle of the frittata is cooked through. Typically, the middle should be not be wet to the touch, but ever-so-slightly jiggly. The frittata doesn't need to be browned on top and will continue to cook even when taken out of the oven as it cools. A good frittata will have a custard like texture and not be over baked. 
  • Top finished frittata with shaved Parmesan, chives, or additional cooked bacon. Enjoy!

Notes

You can use turkey bacon in place of regular bacon in this recipe. If you do, spritz 10 sprays of PAM® Spray Pump Avocado Oil when adding the turkey bacon to the browned onions. 
Feel free to substitute the dairy in this recipe with whatever you have on hand. The most unctuous frittata should be made with full-fat dairy not skim or fat-free. Other whole food substitutions such as sour cream, half & half, heavy cream, or whole milk will all work well. 
...If you are curious why I say this frittata is only 5 ingredients it is because I don't count simple pantry ingredients such as salt, pepper, and non-stick cooking spray that the majority of us have on hand at all times. :)
