Autumn Spiced Turkey Salad

If you have leftover turkey, this easy recipe is a must! This healthy gluten free salad recipe combines all the flavors of fall. The crunchy apples and dried cranberries are sweet and tart, and the cinnamon and nutmeg complement the flavor of the turkey breast (try smoked meat!). Use this clean eating harvest salad in a sandwich, wrap, or with vegetable dippers. Use plain Greek yogurt in place of mayo or dairy free almond yogurt too.

Ingredients

  • 2 cups leftover turkey meat, shredded or chopped (chicken can be substituted)
  • 1 small apple diced
  • 1/4 cup dried cranberries
  • 1 stick celery diced
  • 1 carrot shredded
  • 1/4 cup onion diced
  • 1/4 cup plain Greek yogurt or mayo or plain almond milk yogurt
  • 1 Tbsp dijon mustard
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  • Chop all the vegetables into bite-sized pieces.
  • Mix all ingredients together in a medium sized bowl.
  • Eat alone, on a spinach salad, a wrap, sandwich, or with vegetables. Enjoy!

Notes

You can substitute chicken breast for turkey. 
Substitute almond milk yogurt or mayonnaise for the plain Greek yogurt if dairy free.
