4 Ingredient Coconut Lime Energy Bites
This easy no bake recipe will quickly become your favorite healthy snack especially during the hot summer months! Gluten-free dates, almonds, coconut, and lime combine to create a clean eating, Paleo, 21 Day Fix & Whole30 approved, and vegan recipe that is perfect for kids and adults alike. Take on your next camping trip, hike, or pack for your kids school lunch!
Servings: 20 bites
- 1 cup almonds
- 1 cup pitted and dried dates
- 1/2 cup shredded unsweetened coconut
- 1 lime, zested & juiced 1 Tbsp zest & 1 Tbsp + 1 tsp juice
Add all ingredients to food processor.
Process on high until a crumbly and sticky mixture form. Take some mixture and see if it sticks together enough to form into a ball. If it does, go ahead and form your bites. If not, add a little more lime juice or water to wet the mixture just enough to make it hold together.
You should end up with 20- 1" bites to enjoy now or store in your fridge or freezer for later consumption.
