Chocolate Chip Cookie Protein Cake | This healthy breakfast cake for one is dairy free, gluten free, and low sugar. Use a vanilla whey or Naked Nutrition vegan protein powder (my fav!), eggs, and applesauce in this single serve recipe. Top this easy recipe with sugar free Lily's dark chocolate chips and coconut milk whipped cream if you have it for dessert! Eat this high protein breakfast idea with coffee and collagen for over 40 grams of protein. Or use for a baby's 1st birthday cake!

Equipment

  • 1 small cast iron pan or an oven safe baking dish

Ingredients

Batter

  • 1/3 cup unsweetened applesauce
  • 2 scoops NAKED Nutrition Vegan Vanilla protein powder or 1/3 cup see notes for other brands of protein powders or whey protein
  • 1 egg
  • 1 egg white or 2 Tbsp
  • 1/8 tsp almond extract (see notes)
  • 2 tsp coconut flour
  • 1 tsp baking powder
  • 2 tsp almond butter
  • 1 Tbsp Lily's sugar free dark chocolate chips

Toppings

  • 1 Tbsp Lily's sugar free dark chocolate chips
  • sea salt flakes or regular sea salt
  • whipped cream optional

Instructions

  • Preheat oven to 350F.
  • Spray non-stick cooking spray into a 6" diameter round glazed cast iron pan or any oven safe skillet.
  • In a small bowl, whisk together all cake batter ingredients until the batter is smooth.
  • Pour batter into greased pan and bake for 21 minutes. Be careful to not overbake or the cake will be dry. The top should be set and the edges a golden brown.
  • Remove the cake from the oven and promptly place the dark chocolate chips on top. Sprinkle a few sea salt flakes on top too!
  • Allow cake to cool for 10-15 minutes before you start eating. Top with whipped cream, if desired. Enjoy!

Notes

When substituting a whey protein powder or different brand of vegan protein powder for the Naked vegan protein, the cake may have a different consistency or texture once baked. Protein powders and baking can be finicky. It may take a few tries before you get the ratios correct OR it may work perfectly the 1st time. This cake is so yummy, it's worth getting right. :) 
 
I love the flavor that almond extract gives to baked goods. Almond extract always reminds me of wedding cake which makes me happy! If you don't have almond extract, just leave it out of the cake no big deal. This protein cake will taste just as good!
