Skinny Chocolate Chip Cookie Dough for One
This healthy and clean eating cookie dough recipe is edible, eggless, and for one. So don't even think about sharing! Ha! It is vegan, gluten free, and utterly delicious. There are only 6 easy ingredients- protein powder, coconut flour, applesauce, vanilla and almond (or butter) extract, and chocolate chips. Snacks and desserts just got tasty with this low carb and grain free treat!
Servings: 1 person
- 2 Tbsp unflavored vegan protein powder
- 2 Tbsp coconut flour
- 5 Tbsp unsweetened applesauce
- 1/2 tsp vanilla extract
- 1/8 tsp almond (or butter) extract
- 1 Tbsp mini chocolate chips
Mix all ingredients together in bowl. Let dough sit for a few minutes to allow the coconut flour to absorb the liquid. If the dough is too wet, add a little more protein powder or coconut flour. If the dough is too dry, add a little more applesauce.
Depending on the protein powder you use, you may not need the vanilla or almond extract. You may want to taste the cookie dough before you add the vanilla and almond extracts, just in case.
Everyone's protein powder is different and everyone's tastes are different. If you try a couple little tastes of the dough and find it needs to be sweeter, add a little honey, maple syrup, coconut sugar, or Stevia.
