This high protein lunch for one is a balanced meal option and can be oven baked! Make this easy loaded nachos recipe when you have leftover taco meat (I use beef, venison, or ground turkey). With over 30 grams of protein and low fat thanks to the bell pepper dippers and tortilla chips. Gluten free and can be vegetarian without meat. You can also make this clean eating nachos on a sheet pan in the oven aka sheet pan nachos. This air fryer recipe is done in 2 minutes!
plain Greek yogurt or a dollop of yogurt mixed with lime juice drizzled over nachos
pickled red onions
5halved cherry tomatoes
cilantro
sliced black olives, guacamole, and jalapenosoptional toppings
Instructions
Line the air fryer with aluminum foil.
Add a layer of tortilla chips to half of the tray and the pepper halves.
Top the chips and peppers with warm taco meat and sprinkle with cheese.
Put tray in air fryer at 350F for 2 minutes or until cheese is melted.
While nachos are in the air fryer, cut your tomatoes in half, shred your lettuce or dice finely, and dice up the cilantro. Add as much lettuce and cilantro as you want.
Remove nachos and top with salsa, plain Greek yogurt, pickled red onions, tomatoes, and cilantro. Other possible toppings are sliced black olives, guacamole, and jalapenos.
You can lift the aluminum foil out of the hot air fryer tray and eat. Enjoy!
