Instructions
Preheat the waffle maker on medium heat. (Our waffle maker has settings from 1-5. We set the temp to 3.)
In a medium-sized bowl, whisk together all the wet ingredients.
1 cup plain unsweetened almond milk, 1 egg, 1 teaspoon vanilla extract, 1/4 cup oil
Then add all the dry ingredients and whisk together until combined. There will still be a few small clumps.
1/3 cup cocoa powder, 1/3 cup monk fruit sweetener, 2 teaspoons baking powder, 1/8 teaspoon salt, 1 cup gluten-free 1:1 flour blend
Spray the waffle iron with non-stick cooking spray. Pour the batter into the waffle iron, close lid, and allow the batter to bake for 3-5 minutes (see notes). The waffles are typically done when the waffle maker is no longer steaming and waffles are firm and dry to the touch.
Remove the waffles from the waffle iron and place on a cooling rack until all the waffles are made. They may seem a little soggy when first removed from the waffle iron but will crisp up after a couple minutes.
Top the waffles with the optional toppings. Store leftovers in the fridge for up to 3 days and reheat as necessary.

Flavor Tips - We love adding 1/4 teaspoon almond extract along with the vanilla extract to these waffles . Almond extract always make baked goods taste more like cake to us!Baking Tips - Waffles are typically done in 3-5 minutes, but the exact time depends on your waffle maker. A good indicator is when the steam stops escaping from the waffle iron, or when the waffle releases easily from the plates.Toppings Tips - Serve these waffles for a fun dessert rather than breakfast by topping with a scoop of ice cream, a drizzle of chocolate sauce and top with whipped cream. Storage Tips - These waffles can be frozen for up to 3 months. To freeze the waffles, allow them to cool and place them on a parchment-lined baking sheet and flash freeze them for 10 minutes. Once they are flash-frozen, you can remove them from the baking sheet and place them inside a freezer-safe bag or airtight container.
