Instructions
Preheat the oven to 350F. Spray a 9x13 or 3 quart baking dish with non-stick cooking spray. Set aside.
In a large bowl, stir together the apples, maple syrup, flour, cinnamon, vanilla extract and salt. Pour the apple mixture into the prepared baking dish and spread evenly.

In the same large bowl, whisk together the oatmeal, flour, brown sugar, and cinnamon. Using a pastry cutter or a fork, cut in (mix) the cold butter until the mixture is crumbly. Sprinkle over the apples and spread evenly.

Bake in the oven for 45-55 minutes or until the apples are soft, the juices are bubbling up the sides, and the topping is golden brown and crisp (see notes). If desired, serve with whipped cream or ice cream.
Allow the apple crisp to cool for at least 20 minutes before serving.

Store leftovers in an airtight container in the fridge for up to 3 days.

Notes
Baking Tips - Test the apples' tenderness with a paring knife or fork. If the apples are resistant but the topping is golden brown, cover the crisp with aluminum foil so the apples can bake without the topping burning.
