Skip the pre-made options, and make this easy candied almonds recipe with just six ingredients for a sweet, spiced, crunchy snack perfect for the holidays!
Preheat the oven to 250 degrees F. Place parchment paper or a silicone baking mat (see notes) on a large rimmed baking sheet.
In a small bowl, combine the sugar, cinnamon, and sea salt. Set aside.
1 cup white sugar, 1/2 Tablespoon ground cinnamon, 1 teaspoon salt
In a large mixing bowl, whip the egg whites and vanilla with a whisk until frothy (about 1 minute).
2 egg whites, 1 Tablespoon vanilla extract
Add the almonds to the frothy egg white mixture and stir until evenly coated.
4 cups (21 ounces or 600 g) whole raw almonds
Sprinkle the cinnamon sugar mixture over the almonds and stir until the almonds are evenly coated.
Spread the almonds evenly on the prepared baking sheet. Bake for 1 hour, stirring every 15 minutes.
After one hour remove the almonds from the oven, give them a final stir and let them cool on the baking sheet.
Store in an airtight container at room temperature for up to 2 weeks, 2 months in the fridge or up to 6 months in the freezer.

Baking Tips - We prefer to use a silicone baking mat when making these almonds because the liner does not move around when turning the almonds while they bake. Use an oven safe spatula/turner to turn the almonds to allow them to evenly cook. A large spoon works too!Cost Tip - To save money on almonds, purchase in bulk at your local Sam’s Club or Costco.
