Heat the griddle pan on the stove top over low-medium heat.
Butter one side of each bread slice. Put buttered side down on the pan. Add a slice of cheese, meatloaf, another slice of cheese and another buttered slice of bread (buttered side up) to finish the sandwich.
Place the sandwiches on the warm griddle and cover the pan with aluminum foil (this helps the sandwiches to warmed sufficiently). Cook until the bread is browned and the cheese is melted. Flip the sandwiches and cook until the remaining side is browned and cheese is melted.
These sandwiches are best enjoyed immediately.
