Enjoy all the flavors of your favorite cocktail with these four-ingredient, no-bake pina colada coconut energy bites for a healthy, alcohol-free snack!
1 cup almonds, 1/2 cup shredded unsweetened coconut, 1 cup dried pineapple, 1 teaspoon vanilla extract
Process on HIGH until a crumbly and sticky mixture forms.
Take some mixture and see if it sticks together enough to form into a ball. If it does, go ahead and form the bites. If not, add water 1 teaspoon at a time to wet the mixture just enough to make it hold together.
Store the bites in an airtight container in the fridge for up to 2 weeks or the freezer for up to 3 months.
