Preheat the oven to 400F. Spray a 9x13 baking dish with non-stick cooking spray. Set the pan aside.
In a large bowl, add all the ingredients and mix until well combined. Pour into the greased pan.
12 eggs, 1/2 cup oat flour, 1 teaspoon baking powder, 1 cup plain Greek yogurt, 2 (4oz) cans chopped green chiles, 1 cup shredded pepperjack cheese, 1 cup shredded cheddar cheese, 1/2 teaspoon salt, 1/4 teaspoon black pepper
Bake for 30 minutes or until the edges are browned and the middle is puffed up.
Serve immediately and refrigerate leftovers in an airtight container for up to 4 days.
