In a large mixing bowl, add all the ingredients. Mix together with a spoon until combined.
2 cups old fashioned oatmeal, 1/2 cup shredded unsweetened coconut, 1/2 cup honey, 1/2 cup peanut butter, 1/4 cup ground flaxseed or hemp seeds, 1/2 cup Easter M&M's, coarsely chopped or crushed
Press the mixture into a bread pan lined with plastic wrap. Refrigerate for at least 1 hour, remove from fridge and cut into bars. **OR** Scoop out 1 Tablespoon of batter at a time and roll into balls (see notes).
Store bites in an airtight container in the fridge for up to 2 weeks or the freezer for up to 3 months.

Substitute Tips – The peanut butter may by substituted with any nut butter or nut-free seed butter.Prep Tips – If the batter is too sticky, add more oats or chill the mixture in the fridge for 30 minutes and then roll into bites. If the batter won’t press and roll into balls, add more nut butter and honey. Pressing and squeezing the batter together to roll into bites is the key. The batter won’t simply “roll” into balls like cookie dough batter.
