14 -16 ounce bag shredded coleslaw mix , 1/4 cup mayonnaise, 2 Tablespoons apple cider vinegar, 2 teaspoons monk fruit sweetener, 1/2 teaspoon salt, 1/4-1/2 teaspoon ground black pepper
Using a large spoon, mix the ingredients together until combined.
For the best flavor, cover and refrigerate for at least 1 hour before serving. Adjust seasonings, as needed.
Store in the fridge in an airtight container for up to 5 days.

Substitute Tips - Granulated sugar or honey can be substituted for the monk fruit sweetener.Prep Tips - If using a whole cabbage, cut the cabbage into quarters and use a mandoline slicer to thinly slice the cabbage. Use a julienne y-peeler or box grater to finely shred the carrots.
