  • Shredded Coleslaw Mix – To keep things super quick and easy, we use a bag of pre-made store-bought coleslaw mix. However, you can also finely shred cabbage and carrots with a box grater or food processor if preferred. 
  • Mayonnaise – This forms the base of the dressing, creating the creamy consistency and tangy flavor we look for in traditional coleslaw recipes. 
  • Apple Cider Vinegar – This adds extra tangy and a subtly sweet taste. 
  • Sweetener – We use monk fruit sweetener to keep this recipe sugar-free, but granulated sugar or honey will also work. 
  • Salt and Pepper – Adjust to taste. 

How to Make This Easy Coleslaw Recipe 

  1. Combine. Add all the ingredients to a large bowl.

Why is my coleslaw recipe watery? 

Cabbage is naturally watery and can sometimes bleed into the coleslaw making it runny. To prevent this, feel free to salt your cabbage and let it rest for a few minutes before combining all the ingredients. 

How should I store leftovers? 

Cover and refrigerate leftover creamy coleslaw for up to 5 days. Just be sure to give the mixture a good stir to redistribute the ingredients.

  • In a large bowl, add all the ingredients.
    14 -16 ounce bag shredded coleslaw mix (6-7 cups shredded cabbage and carrot mix), 1/4 cup mayonnaise, 2 Tablespoons apple cider vinegar, 2 teaspoons monk fruit sweetener, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper
  • Using a large spoon, mix the ingredients together until combined.
  • For the best flavor, cover and refrigerate for at least 1 hour before serving.
  • Store in the fridge in an airtight container for up to 5 days.

Notes

Regular sugar or honey can be substituted for the monk fruit sweetener.
