Easy Valentine Cookies Recipe (Under 30 Minutes!)

Valentine cookies come together with just six simple ingredients in under 30 minutes thanks to the use of cake mix!

1 (15 ounce) boxed white cake mix
1/3 cup neutral oil (light olive oil or avocado oil)
2 eggs
food coloring (optional)
1/2 cup powdered sugar
16 Hershey Kisses and/or Hugs (unwrapped)

Instructions

Line a baking sheet with parchment paper and set aside. Preheat the oven to 350F.
In a large bowl, add the white cake mix, oil, and eggs. Mix with a spoon until well combined.

(Optional) Divide the batter evenly between 3 bowls and add 4-5 drops of food coloring and mix well.

Using a cookie dough scoop, roll the dough into 1 1/2 inch balls and generously roll in the powdered sugar. Place the coated dough balls on the prepared baking sheet about 2 inches apart.

Bake for 12-13 minutes or until the tops of the cookies crinkle and the edges are set. The cookies will firm up as they cool.
Remove the cookies from oven and allow to cool for 1-2 minutes. Then place an unwrapped Kiss or Hug in the center of each cookie.

After the cookies have cooled slightly on the baking sheet (15 minutes), move to a cooling rack. Allow to cool completely and store in an airtight container for up to 1 week.

Notes

Prep Tips - You can make the cookies smaller by using 1 inch dough balls. Bake for 9-10 minutes or until the tops of the cookies crinkle and the edges are set. The cookies will firm up as they cool.
