Line a 9x5 bread pan with plastic wrap. Set aside.
Add all ingredients, except water, to a food processor.
1 cup raw almonds, 1 cup (about 140 g) pitted and dried dates, 1/2 cup shredded unsweetened coconut, 2 Tablespoons molasses, 1 teaspoon pumpkin pie spice, 1/8 teaspoon sea salt
Process on HIGH until a crumbly and sticky mixture forms. Take some mixture and see if it sticks together enough to form into a ball. If it does, go ahead and press the mixture into the prepared pan. If not, pulse in a little water to wet the mixture just enough to make it hold together.
1 Tablespoon water, if needed
Place the pan in the freezer for 30 minutes or the refrigerator for 1 hour to allow the mixture to harden. After the mixture is slightly hardened, using the plastic wrap, lift out of the pan. Cut the mixture into squares, sprinkle with additional shredded coconut and store covered in the fridge for up to 2 weeks.
