Place the Oreo cookies in a food processor. Process the cookies on LOW until the mixture resembles course sand.

Pour the cookie crumbs into a large bowl. Mix in the room temperature cream cheese and hot cocoa mix until combined (see notes).
8 ounces (1 brick) cream cheese, room temperature, 1/2 cup hot chocolate mix
Using a 1 1/2 Tablespoons cookie dough scoop or a spoon take the mixture and roll into balls. Place on a baking sheet lined with wax paper and freeze for 30 minutes.
Once the unfinished truffles are frozen, pour the chocolate chips into a microwave-safe bowl. Microwave in 30 second intervals for 2 minutes and stir often until all the chocolate chips are melted. Be careful the chocolate doesn't burn! Whisk 2 teaspoons oil into the chocolate mixture.

Remove the truffles from the freezer and dip one by one into the melted chocolate. Using a fork, set the truffle on the tines to let the chocolate drip off while lightly tapping the side of the bowl with the handle to remove the excess chocolate. If the chocolate coating on the truffles is too thick, whisk in another teaspoon oil and/or microwave the melted chocolate again for 15 seconds.
Place the coated truffles on the lined baking sheet and sprinkle immediately with sprinkles before the chocolate hardens.

Store the truffles in an airtight container in the refrigerator for up to 2 weeks.

Prep Tips - If the cookie/cream cheese mixture is too hard to combine, pop the bowl in the microwave for 15-20 seconds to soften the cream cheese. Reheating of the melted chocolate chips for 15-20 seconds may be needed halfway through coating the truffles. Storage Tips - The truffles can be stored in the freezer for up to 3 months. Thaw overnight in the refrigerator before serving.
