1 teaspoon vanilla extract, lemon zest from ½ lemon, ½ lemon, juiced, ¼ cup blueberries, 2 Tablespoons maple syrup
Secure a lid on the jar and place in the fridge to chill for at least 12 hours to allow the oats to thicken.
If desired, top with additional blueberries and lemon zest, when serving. The oats can be stored in the fridge for up to 5 days.

Prep Tips -If you prefer a smoother texture, feel free to add all ingredients, EXCEPT BLUBERRIES, to a blender and blend until smooth. Gently stir in the blueberries until combined.
