Lemon Blueberry Overnight Oats
The lemon blueberry overnight oats recipe is the dreamiest meal prep breakfast recipe for spring! With sweet blueberries, a vibrant pop of lemon, subtle vanilla notes, and the perfect touch of sweetness, every bite screams spring, and the oats are nutrient-packed to keep you full all morning long!

As soon as the weather turns warm, we start leaning into all things lemon, such as lemon strawberry shortcake, raspberry lemonade, and even our lemon chicken and rice salad. They’re all great, but when it comes to flavor combinations, you really can’t beat lemon and blueberry.
And when the two are combined in a quick, make-ahead breakfast? It’s truly a dream come true! We prep large batches of these oats at the beginning of the week and enjoy them for days, mixing and matching different toppings. Thick, creamy, and refreshing, they’re the perfect way to start the day and guaranteed to be loved by the whole family!

- Oats – Make sure to quick oats. Steel-cut oats and rolled oats (old-fashioned oats) won’t absorb the liquid and soften the same way. Make sure to look for certified gluten-free oats if you need to keep your oats gluten-free!
- Milk – We use unsweetened vanilla almond milk, but any non-dairy milk or cow’s milk will work. Use full-fat canned coconut milk if you want an even fruitier flavor.
- Chia Seeds – Don’t skip these! Not only are they super nutritious, but chia seeds are key to creating a thick, almost pudding-like consistency.
- Greek Yogurt – We use plain Greek yogurt, but you can substitute vanilla Greek yogurt for a stronger vanilla taste. Whole-fat yogurt will provide the richest flavor and creamiest consistency, but any percentage works well.
- Vanilla Extract – Just a splash enhances the sweetness, adds depth, and infuses the oats with a delicious vanilla flavor.
- Lemon – We use both lemon juice and lemon zest to add a bright, citrusy flavor that balances the sweetness nicely. Be careful to avoid the white pith when zesting! It can cause your blueberry lemon overnight oats to taste a little bitter.
- Pudding Mix – Technically optional but highly recommended, sugar-free cheesecake Jell-O pudding mix creates a super thick, creamy consistency and a dessert-like flavor.
- Blueberries – Use fresh blueberries. Frozen berries will cause the oats to become too watery.
- Maple Syrup – Adjust to taste. Honey also works well if preferred.
Tip: Want extra protein? Stir in a scoop of plain or vanilla protein powder! Just keep in mind that you’ll likely need to add an extra splash of milk to make sure it incorporates into the oats evenly.


Topping Ideas and Serving Suggestions
Note: If you prefer a smoother texture, feel free to blend your oats before chilling in the fridge or serving. This creates extra creaminess, making the oats more like pudding.
Of course, you can serve these lemon blueberry overnight oats on their own, but the toppings are our favorite part! Some of our favorite options include extra blueberries, raspberries, strawberries, blueberry jam, coconut flakes, hemp seeds, a drizzle of maple syrup, white chocolate chips, chopped nuts, and whipped cream.
If hosting a brunch or if we’re just extra hungry, we add savory breakfast options like turkey sausage egg casserole, easy Parmesan bacon frittata, or breakfast egg muffins. You can never go wrong with cinnamon swirl sourdough bread, sourdough sandwich bread, or a winter fruit salad, too!
How to Store
Once combined, you can store these oats in an airtight container, like a mason jar, in the refrigerator for up to 5 days. Just give them a good stir before serving to redistribute the ingredients.

- 40 grams (heaping 1/3 cup) quick oats
- 1 cup unsweetened almond milk
- 120 grams (1/2 cup) plain Greek yogurt
- 2 Tablespoons chia seeds
- 14 grams (2 Tablespoons) sugar-free cheesecake Jello pudding mix
- 1 teaspoon vanilla extract
- lemon zest from ½ lemon
- ½ lemon, juiced
- ¼ cup blueberries
- 2 Tablespoons maple syrup
Instructions
- In a 24 ounce mason jar or medium-sized mixing bowl, whisk the oats, milk, yogurt, chia seeds, and pudding mix until smooth.40 grams (heaping 1/3 cup) quick oats, 1 cup unsweetened almond milk, 120 grams (1/2 cup) plain Greek yogurt, 2 Tablespoons chia seeds, 14 grams (2 Tablespoons) sugar-free cheesecake Jello pudding mix
- Stir in the remaining ingredients until combined.1 teaspoon vanilla extract, lemon zest from ½ lemon, ½ lemon, juiced, ¼ cup blueberries, 2 Tablespoons maple syrup
- Secure a lid on the jar and place in the fridge to chill for at least 12 hours to allow the oats to thicken.
- If desired, top with additional blueberries and lemon zest, when serving. The oats can be stored in the fridge for up to 5 days.
