unsweetened plain almond milk
plus additional milk for serving

Instructions
Preheat the oven to 350°F. Spray a 9×13 pan with non-stick cooking spray and set aside.
In a large bowl, whisk together the eggs. Then add in the milk, melted butter, and vanilla. Whisk until smooth.
4 eggs,
2 cups unsweetened plain almond milk,
1/4 cup melted butter or light olive oil,
2 teaspoons pure vanilla extract
Stir in the oats, monk fruit sweetener, baking powder, cinnamon, and salt until combined.

2 teaspoons baking powder,
1 teaspoon ground cinnamon,
1/2 teaspoon salt
Pour the mixture into the greased pan and top the oats with the bag of frozen berries. Spread evenly over the top.
16 ounce bag frozen mixed berries
Bake uncovered for 45-55 minutes or until the oats are tender and the middle is set and not wet to the touch. The edges are typically browned.
Serve immediately in a bowl with a splash of milk, drizzle of honey, or eat plain. Cover and refrigerate any leftovers for up to 4 days.
