In a small soup pot, add the brown sugar, water, and salt. Whisk over medium heat until the sugar dissolves, about 2 minutes.

Turn off the burner or remove the pan from the heat and stir in the powdered peanut butter and vanilla extract. Allow the sauce to cool as it will thicken.

Slice the apples and pile them high on a plate or layer them on a platter.

Drizzle the sauce over the apples and sprinkle with chocolate chips. Add a few dashes of flaked sea salt to the nachos, if desired.

Notes
Substitute Tips - Golden monk fruit sweetener may be substituted for the brown sugar or coconut sugar. However, more water (1 teaspoon or more) will need to be added to the sauce as monk fruit sweetener tends to thicken more than regular sugar when cooled.
