Spray an 8×8 baking pan with non-stick cooking spray. Preheat the oven to 350°F.
Prepare the brownies as instructed on the brownie mix box (eggs, oil, water) plus add 3 drops of peppermint essential oil to the batter and mix until combined.
Bake according to instructions. Remove from the oven and let the brownies cool.
Sprinkle crushed candy canes on top of the baked brownies. Cut into squares and serve immediately or store at room temp in an airtight container for up to 3 days.

Substitute Tips - Feel free to use a regular brownie mix if there is no need to be gluten-free. 1 teaspoon peppermint extract may be substituted for the 3 drops of peppermint essential oil.
Storage Tips - If baking these brownies ahead of time and freezing, add the crushed candy canes once the brownies are thawed and you are ready to serve.
