Pour the Chex cereal and pretzels into a very large bowl (preferably a very large mixing bowl with a lid - think 20-30 cup/ 6-7 liter Tupperware bowl w/ lid). Set aside.
In a medium-sized glass bowl, add the chocolate chips, Sunbutter, and olive oil. Microwave for about 2 minutes on power setting 5. Stir until combined and the chocolate is completely melted. Then stir in the vanilla.
1 cup dairy free dark chocolate chips, 1/2 cup Sunbutter, 2 Tablespoons light olive oil, 1 teaspoon vanilla extract
Pour the chocolate mixture over the bowl of cereal and pretzels. Gently fold together until the cereal and pretzels are coated.
(See notes for alternative method.) Add in the powdered sugar. Either gently mix with a wooden spoon or secure the lid and shake the powdered sugar until the cereal is completely coated with powdered sugar. The cereal and pretzels should be white not brown in appearance.
2 cups powdered sugar
When the mixture is cool, add the candy coated chocolates. Store in an airtight container for up to 7 days, package for gifts, or set out for company to enjoy.

Notes
Substitute Tips - Use regular Chex cereal, pretzels, peanut butter (or any nut butter), chocolate chips, or butter for the olive oil if allergies are of no concern. Alternative Method - In two gallon-sized Ziploc bags, add 1 cup powdered sugar to each bag. Set aside. Divide evenly the chocolatey coated cereal mixture between the two gallon-sized bags. Seal the bags closed and shake until the powdered sugar coats all the cereal mixture. Open each bag and lay the bags on their sides to allow the mixture to cool and dry out a bit. Prep Tips - Add more powdered sugar to the bowl (or bags) if the cereal is not coated as desired. Depending on the brand of ingredients and measurements, you may need a little more sugar to coat the Reindeer Chow properly. The cereal and pretzels should be white not brown in appearance.
