1cupKodiak Cakes pancake mix(or a protein pancake mix)
1cupshredded cheddar cheese
Instructions
In a large saute pan over medium heat, brown and crumble the sausage with the red pepper flakes and cayenne pepper. Set aside and allow to cool to room temperature.
Preheat the oven to 350F and grease or line 10 wells of a muffin pan with liners.
In a large mixing bowl, whisk together the eggs and maple syrup. Then fold in the pancake mix, cooked ground breakfast sausage and shredded cheddar cheese.
4 eggs, 2 Tablespoons maple syrup, 1 cup Kodiak Cakes pancake mix, 1 cup shredded cheddar cheese
Scoop the batter evenly into the prepared muffin pan.
Bake in the oven for 20 minutes or until the muffins are puffed up.
Once the muffins are cooled, store in the fridge in an airtight container for up to 5 days.
Notes
Ingredient Tips - Spicy ground turkey sausage can be substituted for the regular ground turkey sausage. Omit the red pepper flakes and cayenne pepper if using spicy sausage.Reheating Tips - Reheat in the microwave for 30 seconds or in an air fryer or toaster oven at 250F for 5 minutes.
