Sausage Pancake Mix Muffins

These sausage pancake muffins are a quick and easy breakfast recipe that we love for meal prep, storing them in an airtight container in the fridge or freezer! Sweet and savory, they’re super kid-friendly while still providing 15 grams of protein per serving, meaning they’re filling, too.

We love chocolate chip zucchini pancakes and protein powder pancakes in the morning, but we typically reserve them for weekends and special occasions. When it comes to everyday breakfasts, these pancake mix muffins are the recipe we turn to. 

It was originally given to me by my friend, Jenny, and everyone loved it so much that I knew it needed a permanent spot on the blog! Jenny uses pancake flour and Jimmy Dean hot sausage, but I made a few swaps for a slightly different taste and texture, along with extra protein. No matter how you make them, these delicious muffins are guaranteed to be a new favorite!

  • Sausage – We use ground turkey sausage, but any sausage you have on hand, such as pork or chicken sausage, tastes great. 
  • Spices – Red pepper flakes and cayenne pepper add depth and spice to the meat. If using spicy sausage, feel free to omit it. Or, use more mild options like garlic powder or onion powder instead. 
  • Eggs – These act as a binder, helping the muffins hold their shape. 
  • Maple Syrup – This adds the perfect touch of sweetness without being overpowering. We use regular maple syrup, but low-calorie maple syrup or pancake syrup also works well. 
  • Pancake Mix – Kodiak Cakes pancake mix is our secret ingredient for added protein while keeping this recipe super easy! However, we’ve tested these pancake muffins with a variety of pancake mixes, such as Krusteaz pancake mix and gluten-free pancake mix, and they all work well. 
  • Cheese – Cheddar cheese adds a sharp, savory flavor and a delicious, melty texture. Feel free to substitute any shredded cheese you like best, such as Monterrey Jack or Colby cheese. 

How to Make Sausage Pancake Muffins with Pancake Mix

  1. Cook the sausage. Brown the sausage in a large pan over medium heat, breaking it into pieces as it cooks. Then, add the spices, stir to combine, and set aside to cool.

2. Prep the batter. Next, whisk the wet ingredients in a large bowl. Then, fold in the dry ingredients just until smooth to avoid adding too much air.

3. Portion and bake. Scoop the pancake batter into a muffin tin greased with cooking spray or melted butter, and bake in a preheated oven until the muffins puff up, are golden brown, and a toothpick inserted into the center comes out clean.

4. Serve. Cool in the pan slightly before transferring to a wire rack to cool completely at room temperature, and enjoy!

Possible Variations

  • Sausage – Use cooked, crumbled bacon instead. Or, omit the meat, if preferred. 
  • Cheese – Use mozzarella, Colby Jack, or pepperjack for a different taste. 
  • Veggies – Add sautéed onions, bell peppers, or spinach for extra nutrients. 
  • Spice – Fold diced jalapeños into the batter for extra spice. 
  • Sweet – Skip the sausage, cheese, and spices, and make these easy pancake muffins sweet with fun add-ins instead! Try including vanilla extract and then folding mix-ins like chocolate chips, sprinkles, fresh strawberry pieces, sliced bananas, fresh blueberries, diced apples, or mixed berries into the batter instead to create different flavors. You can even use your favorite flavor of pancake mix for a different taste. 
  • Mini Muffins – Instead of making regular muffins, spoon the batter into a greased mini muffin pan, and adjust the baking time as needed for bite-sized muffins. You’ll likely have enough batter to make a second or third batch if making smaller muffins.

Our Favorite Ways to Serve

Our little ones love to dip their sausage pancake muffins in warm maple syrup as a quick breakfast or snack. However, we typically enjoy them as-is, taking them on the go on busy mornings. For a heartier meal, we add a fresh fruit salad or winter fruit salad, too!

Ingredients
  

  • 1 pound ground turkey sausage (see notes)
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon cayenne pepper
  • 4 eggs
  • 2 Tablespoons maple syrup
  • 1 cup Kodiak Cakes pancake mix (or a protein pancake mix)
  • 1 cup shredded cheddar cheese

Instructions
 

  • In a large saute pan over medium heat, brown and crumble the sausage with the red pepper flakes and cayenne pepper. Set aside and allow to cool to room temperature.

  • Preheat the oven to 350F and grease or line 10 wells of a muffin pan with liners.
  • In a large mixing bowl, whisk together the eggs and maple syrup. Then fold in the pancake mix, cooked ground breakfast sausage and shredded cheddar cheese.

  • Scoop the batter evenly into the prepared muffin pan.
  • Bake in the oven for 20 minutes or until the muffins are puffed up.
  • Once the muffins are cooled, store in the fridge in an airtight container for up to 5 days.

Notes

Ingredient Tips – Spicy ground turkey sausage can be substituted for the regular ground turkey sausage. Omit the red pepper flakes and cayenne pepper if using spicy sausage.
Reheating Tips – Reheat in the microwave for 30 seconds or in an air fryer or toaster oven at 250F for 5 minutes.
