Healthy Egg Salad
This egg salad with Greek yogurt is made with hard-boiled eggs, Greek yogurt, yellow mustard, apple cider vinegar, herbs, and spices. Creamy, savory, and tangy, it comes together with just seven ingredients in about 15 minutes and is perfect for an easy meal prep lunch.Â
We love to serve it with crackers for dipping, with sourdough sandwich bread, or even as lettuce wraps for a low-carb option that even our little ones eat!

Every spring, my chickens start producing more eggs than I know what to do with. We always save some to dye for Easter. Then, I give them to neighbors and use them up with recipes like our southwest egg bake and 5-ingredient deviled eggs.
However, this healthy egg salad is one of my go-to recipes when I want something that’s quick, easy, and still super tasty. It tastes just like classic egg salad but is made with a boost of protein, making it extra filling!

- Hard-Boiled Eggs – Hard-boil eggs ahead of time, and peel them before you begin.Â
- Greek Yogurt – We use full-fat, plain Greek yogurt for the richest flavor and creamiest consistency, but any unflavored regular Greek yogurt or dairy-free Greek yogurt will work. If you’re not a fan, mayonnaise is the more traditional option and still tastes great.Â
- Yellow Mustard and Apple Cider Vinegar – These add a subtle tang. Â
- Herbs and Spices – Chopped fresh chives, dried dill, and burger seasoning create a savory, herbaceous taste that sets this Greek yogurt egg salad apart from other recipes.Â
How to Make Egg Salad with Greek Yogurt

- Prep the eggs. Chop the hard-boiled eggs into coarse pieces, making sure to include both the yolk and whites. We like to use a pastry cutter, but you can also just chop them with a knife.Â

2. Combine ingredients. Combine all the ingredients in a large bowl, and gently fold to combine. Give the salad a quick taste test, and season with salt and pepper as needed. Serve immediately, or chill in an airtight container in the fridge. Enjoy!Â

Possible Variations
- Add crunch. Fold in ¼ cup of finely diced celery and about 2 tablespoons of diced red onion for extra texture and flavor.Â
- Include Dill pickles. Stir in 2 tablespoons of finely chopped dill pickles and 1 teaspoon of pickle juice for a tangy, deli-style flavor.
- Make it spicy. Mix in ½-1 teaspoon sriracha, chili crisp, or hot sauce for a little heat.
- Mediterranean egg salad. Add ¼ cup of chopped cucumber, 2 tablespoons of crumbled feta cheese, and a squeeze of lemon juice for a fun twist.Â
- Bacon egg salad. Stir in 3-4 slices of cooked, crumbled bacon for a smoky twist.
- Swap the fresh herbs. Replace the dill with fresh parsley, tarragon, or basil for a brighter herb flavor.
Our Favorite Ways to Serve
Our favorite way to serve this egg salad with Greek yogurt is with bread as a sandwich with a side of chips and fresh fruit salad. However, it’s also great on English muffins or bagels topped with chives or scallions (green onions) and avocado for a breakfast or brunch option.
Or, enjoy it spooned into large lettuce leaves, scooped into avocados, or as a dip with crackers, pretzels, cucumber slices, or veggie sticks.

Ingredients
- 12 hard boiled eggs
- 1/2 cup plain Greek yogurt
- 1 Tablespoon yellow mustard
- 1 Tablespoon apple cider vinegar
- 2 Tablespoons chopped fresh chives or about a handful of fresh chives (see notes)

Instructions
