The Best Easy Galette Recipe

Using pre-made pie crust and three different pie fillings, this Easy Galette Recipe is quick to make, full of sweet, fruity flavor, and perfect for summer! Serve it warm topped with vanilla ice cream for a treat no one can resist.

Fruit galettes might seem intimidating to make, but this recipe couldn’t be easier to toss together. Admittedly, it’s not exactly authentic, but it is delicious! 

In fact, it’s been a staple at our family gatherings for years and is highly requested for Memorial Day and Fourth of July parties. No one will know it takes less than an hour to make.  

Ingredients You’ll Need

Bowls of canned pie filling, roll of refrigerated pie crust, course sugar and an egg.
  • Pie Crusts – Sure, you could make your own dough, but using pre-made varieties saves so much time. And it tastes just as good! We love the Jus Rol pie crusts but feel free to use whatever you like best. 
  • Pie Filling – We’re using apple pie filling, cherry pie filling, and blueberry pie filling for bold flavor and a fun red, white, and blue theme. 
  • Egg – Brushed on top of the crust, this creates a beautiful golden exterior. 
  • Coarse Sanding Sugar – Everything is better with more sugar, right? Not only does this add an extra boost of sweetness, but it also creates a pretty, sparkling top. 

How to Make The Best Easy Galette Recipe

  1. Thaw the crusts. Take the pie crusts out of the refrigerator, and let them rest on the counter for about 20 minutes to soften and become pliable. 
  2. Roll the dough. Use a rolling pin to roll the pie dough out flat. Then, transfer two crusts to a large baking sheet or two smaller baking sheets lined with parchment paper. 
  3. Assemble. Make sure to leave two inches around the edge of the crust, and place a cup of strawberry filling on the left side of one of the dough pieces, spreading it in a straight line. Then, add a cup of the apple pie filling next to the strawberry filling, and place the blueberry filling next to it. Repeat, filling the second crust. 
  4. Create a crust. Fold the two-inch rim of the dough up and over the edge of the filling overlapping and pleating as you go. It should look rustic, not perfect!

  1. Add the egg wash. Whisk the egg in a small bowl, and brush it evenly over the crust. Then, sprinkle the coarse sugar on top. 
  2. Add stars. If desired, use a small star-shaped cookie cutter, and cut six to eight stars of dough from a third crust for each galette. Arrange the stars over the pie filling. Then, brush them with egg wash, and sprinkle more sugar on top. 
  3. Bake. Transfer the galette to the oven, and bake until the crust is golden brown. 
  4. Serve. Allow the galettes to cool slightly. Then, top it with ice cream or whipped cream, and enjoy warm!  

Common Questions

How do you keep the bottom of a galette from getting soggy? 

If you’re worried about this easy galette recipe becoming soggy, brush the bottom of the crust with egg whites before adding the filling. This creates a barrier, preventing the liquid from soaking into the bottom. 

What is the difference between pie dough and galette dough? 

The dough is the same! The desserts differ in how they’re prepared, with galettes being a free-form pastry with an open on top. 

How long does this recipe last? 

This recipe is best served right away. However, if you have leftovers, you can transfer them to an airtight container and store them in the fridge for up to four days. Just keep in mind that the longer the dessert sits, the more likely it is to become soggy!

Ingredients
  

  • 2 refrigerated rolls of pie crust dough
  • 21 oz strawberry pie filling
  • 21 oz apple pie filling
  • 21 oz blueberry pie filling
  • 1 egg
  • 1/4 cup course sanding sugar
  • additional pie crust to make stars optional

Instructions
 

  • Take the pie crusts out of the refrigerator and let them rest on the counter for about 20 minutes.

  • Preheat the oven to 400F. Line 2 sheet pans with parchment paper.
  • Roll out the pie doughs until they are flat. Place the pie crusts on each prepared baking sheet.
  • Measure 2 inches around the edges of the pie crust. Do not add pie filling to the 2 inch border.
  • Place about 1 cup strawberry pie filling on the left side of the dough in a line. Then add about 1 cup apple pie filling next to the strawberry filling. Lastly, add 1 cup blueberry filling next to the apple pie filling.

  • Fold the 2" rim of the dough up and over the edge of the filling, overlapping the dough as you go around and pleating the dough. It should look rustic, not perfect.
  • Place the egg in a small dish and whisk until combined. Using a pastry brush, brush the crust with the egg wash and sprinkle with the course sugar.

  • (Optional) Take the 3rd pie crust and using a small star-shaped cookie cutter make 6-8 stars and place on top of the pie filling. Brush the stars with the egg wash and sprinkle with the course sugar

  • Bake 25-28 minutes or until the crust is golden brown.
  • Serve with ice cream or whipped cream after galette has cooled 15 minutes. Enjoy!

    I’m usually too lazy to make pies so galettes are my chosen dessert! I love this recipe that uses canned pie filling and store bought crust. It’s always so easy to make and super yummy!
