Pina Colada Coconut Energy Bites (No-Bake)

These Pina Colada Energy Bites come together with just four ingredients and no baking required. Full of sweet fruit, they taste just like your favorite cocktail but are nutritious and completely alcohol-free!

It’s no secret that we love a good no bake recipe here at HappiHomemade. However, these pina colada energy bites are one of our favorite recipes of all time! 

Not only do they have all the flavor of a refreshing pina colada cocktail, but they come together with just four ingredients. Plus, they’re full of vitamins, nutrients, and fiber, too! We can’t exactly say that about a cocktail. 

They’re perfect for pre-workout or post-workout fuel, afterschool snacks, or even a quick breakfast on-the-go. Sweet, refreshing, and oddly slightly creamy, they’re perfect for summer and great to keep on hand in the freezer or fridge. The only problem is that they never last long!  

Ingredients You’ll Need for Pina Colada Bites

  • Almonds – Use whole almonds as the base of these energy balls. Once combined, they create an almond flour that holds everything together. Plus, they add lots of fiber and healthy fats! 
  • Shredded Coconut – We like to use unsweetened shredded coconut, but you can also use sweetened varieties if preferred. 
  • Dried Pineapple – Look for dried pineapple without any added sugars or extra ingredients. This creates a sweet, fruity flavor, and acts as the “glue” holding the bites together. 
  • Vanilla Extract – Don’t skip this! It adds a delicious vanilla flavor that replicates the flavor of your favorite cocktail. 

Note: If you’re making these only for adults, add a few splashes of rum for a truly authentic cocktail taste! 

How to Make Pina Colada Energy Bites

  1. Combine. Add all the ingredients to the bowl of a food processor. Process until a crumbly, sticky mixture forms. 
  2. Shape. Portion the mixture into roughly 20 bites roughly one inch in size. 
  3. Serve. Enjoy immediately, or transfer the bites to the fridge or freezer to chill and set further!

How long do coconut energy bites last? 

Stored in an airtight container in the fridge, these bites will stay fresh for up to one week. 

Can I freeze this recipe? 

Yes! You can freeze your bites for up to three months! Enjoy them straight from the freezer, or let them thaw at room temperature a little first. 

Why are my energy bites falling apart? 

If your bites aren’t holding their shape, add a teaspoon of water at a time, and blend until the mixture becomes tacky enough to hold its shape on its own.

  • Add all the ingredients to a food processor.
    1 cup almonds, 1/2 cup shredded unsweetened coconut, 1 cup dried pineapple, 1 tsp vanilla extract
  • Process on HIGH until a crumbly and sticky mixture forms.
  • Take some mixture and see if it sticks together enough to form into a ball. If it does, go ahead and form the bites. If not, add water 1 teaspoon at a time to wet the mixture just enough to make it hold together.
  • Store the bites in an airtight container in the fridge for up to 2 weeks or the freezer for up to 3 months.
