Ground Beef and Potato Casserole

This ground beef and potato casserole is a hearty comfort food that’s a lifesaver on busy weeknights! The only chopping required is dicing the onion. Then, everything combines and cooks in a single pot in under an hour, delivering savory, cheesy goodness in each bite.

8-Ingredient Ground Beef and Potato Casserole

We rely on casseroles pretty often, especially during the winter. They’re just so warm and cozy! Plus, they’re a great way to sneak in nutrients and always make enough to feed the entire family. This ground beef and potato casserole is one of our particular favorites. 

With just eight simple ingredients, it comes together with a prep time of 15 minutes and is on the table in just an hour. Plus, it packs in protein, fiber, and tons of flavor that even our picky eaters can’t resist.

  • Ground Beef – We recommend using 80% or leaner ground beef, or substitute ground turkey if preferred. 
  • Onion – White or yellow onion adds flavor to the beef. 
  • Cream of Chicken Soup – We use our homemade cream of chicken soup, but store-bought condensed cream of chicken soup also works well. 
  • Milk – Full-fat milk will create the creamiest casserole, but any regular or non-dairy milk will work. 
  • Frozen Potatoes – Look for a bag of cubed frozen potatoes. You’ll need two pounds! 
  • Cheese – Shredded cheddar cheese adds a melty texture and a sharp, salty taste. For the meltiest texture, buy a block of cheese and grate it yourself. 
  • Seasonings – Garlic salt and black pepper enhance the savoriness of the casserole. 

How to Make a Cheesy Ground Beef and Potato Casserole

  1. Brown the meat. Cook the ground beef and diced onion in a Dutch oven, breaking the meat into pieces. Drain excess fat, if needed.

2. Combine. Add the cream of chicken soup, milk, frozen potatoes, cheese, garlic salt, and pepper, mixing to combine.

3. Topping. Top the dish with the remaining cheese.

4. Bake. Cover the Dutch oven, and bake for 30 minutes. Then, remove the lid, and continue to bake until the potatoes are softened and the cheese is melted. Enjoy!

Common Questions

How should I serve this beef and potato casserole? 

We like to add a spinach and roasted eggplant salad or a Greek salad for extra nutrients. You can never go wrong with roasted broccoli, either. Then, we include crescent rolls or garlic cheddar biscuits to scoop up all the sauce. 

Why did my casserole turn out soggy?

The most common reason is undercooking! Make sure to cook for 30 minutes before uncovering the dish. Also, drain excess fat from the meat to prevent it from pooling at the bottom of the dish.

  • 2 pounds ground beef or ground turkey
  • 1 onion, diced
  • 2 ⅔ cups homemade cream of chicken soup or 2 (10.5 ounce) cans condensed cream of chicken soup
  • ½ cup milk
  • 8 cups (2 lbs) cubed frozen potatoes
  • 3 cup shredded cheddar cheese, divided
  • 1 teaspoon garlic salt
  • 1/2 teaspoon ground black pepper

Instructions
 

  • Preheat the oven to 400 degrees. See notes if not using a Dutch oven (stove to oven safe pan).
  • In a 4 quart Dutch oven, cook the ground beef with the diced onion until the meat is browned and the onion is translucent. If needed, drain the fat.

  • While on low heat, add the cream of chicken soup, milk, frozen potatoes, 2 cups shredded cheese, garlic salt and black pepper. Mix until combined.
    2 ⅔ cups homemade cream of chicken soup, ½ cup milk, 8 cups (2 lbs) cubed frozen potatoes, 3 cup shredded cheddar cheese, divided, 1 teaspoon garlic salt, 1/2 teaspoon ground black pepper
  • Top with the remaining 1 cup shredded cheese.
    3 cup shredded cheddar cheese, divided
  • Cover the Dutch oven with the lid and place in the preheated oven. Bake for 30 minutes.
  • Uncover and bake for 15 minutes or until the potatoes are softened and the cheese is melted.
  • Enjoy immediately and store the cooled leftovers in an airtight container for up to 3 days.

Notes

Alternative Method – Instead of using the one-pot method with a Dutch oven, prepare the meat and potato mixture in a large soup pot. Pour the meat and potato mixture into a greased 9″ x 13″ casserole dish and sprinkle the remainder of the shredded cheddar cheese on top. Cover with tin foil and bake for 30 minutes, and carefully remove the tin foil. Bake for 15 more minutes.
Ingredient Tips – The cubed frozen potatoes may be labeled “southern hash browns” in the frozen section. 
Servings Tips – This recipe serves 6 very hungry adults or at least 2 adults and 4 kids with leftovers. As a family of 5 (4 adult-sized portions and 1 kid portion), we typically have enough leftovers for 2 servings the next day.
