We love roasted turkey, but we get so bored with eating Thanksgiving leftovers for days. So, instead of letting anything go to waste, we choose to repurpose the protein, using it in our leftover Thanksgiving turkey salad instead! Sweet, savory, tangy, and loaded with textures to satisfy all your tastebuds, it’s a meal you’ll actually look forward to eating.

We love to serve it with crackers, but it’s also great as a dip with veggie sticks or as a salad. You can even load it onto bread to create a turkey salad sandwich. Add dried cranberries, fresh dill, or cranberry sauce, and you can’t go wrong!

Notes

Substitute Tips – Chicken breast can be substituted for turkey. A rotisserie chicken is a quick and easy substitute for a leftover turkey in this recipe.
Prep Tips – Depending on how moist or dry the turkey (or chicken) is, you may need to add more yogurt and mustard so the salad is not dry. Adjust seasonings as desired.

I really like this salad with turkey or chicken! I make it a lot during the fall months and eat it with Crunchmaster crackers and bell pepper dippers.

I don’t have any leftover turkey but I made this with rotisserie chicken and green onions instead of red because it’s what I had. It’s delicious and light. And even my 3 year old boy loves it so that’s a win for me!

    1. You are SO welcome, Michelle! I am really looking forward to Thanksgiving so we have leftover turkey for this salad. However, when I.just.can’t.wait.any.longer for leftover turkey I break down and buy a rotisserie chicken. Ha!
