This healthy “mocktail” energy bite recipe mimics all the tropical flavors of a Pina Colada and will quickly transport you straight to the beach!

It is not often enough that I am able to put together a fabulous recipe with only 4 ingredients.

However, when I do, watch out because I am doing a pretty epic happy dance in my kitchen!

The 4 simple ingredients in this recipe combine into the most delicious and, dare I say, dreamy energy bites.

I asked Ryan (who fell in love with these bites instantly) how he would describe these bites and the first word he said was “creamy”.

At first I was confused because, I mean, energy bites aren’t “creamy”.

But after thinking about it, I had to agree with him! It must be the coconut and raw almonds being pulverized in the food processor.  πŸ˜‰

I think you will agree these Pina Colada Energy Bites taste very pure and natural.

I credit that with the organic dried pineapple rings I used from our local health food store. Most dried pineapple that you can buy or used in most trail mixes is sweetened and coated in excess sugar.

I wanted these bites to remain as healthy and delicious as possible without the excess sugar.

In our home, we typically make the mixture into round bites. However, this recipe can easily be made into bars by pressing the mixture into a bread pan lined with saran wrap or wax paper.

I usually opt to make them into cute little spheres, but if little bars are your thing go for it!

Another quick note on this recipe, I usually have to add a little water to the mixture to help it bind.

If you are making this recipe for only adults, you can add a little rum instead of water and really have the most authentic Pina Colada Energy Bites EVER! πŸ˜‰ Goodbye, mocktail!

Equipment

  • 1 food processor

Ingredients

  • 1 cup almonds
  • 1/2 cup shredded unsweetened coconut
  • 1 cup dried pineapple
  • 1 tsp vanilla extract

Instructions

  • Add all ingredients to food processor.
  • Process on high until a crumbly and sticky mixture form. Take some mixture and see if it sticks together enough to form into a ball. If it does, go ahead and form your bites. If not, add water 1 tsp at a time to wet the mixture just enough to make it hold together.
  • You should end up with 20- 1" bites to enjoy now or store in your fridge or freezer for later consumption.

Notes

Try adding rum instead of water if you are serving only adults.
