Homemade Pumpkin Spice Latte
High in protein, low in sugar, and easy to make, this homemade pumpkin spice latte recipe is our go-to beverage in the fall! Not only is it ready in five minutes, but it’s way more budget-friendly than coffee shop options and even tastier, if we do say so ourselves.

We love a pumpkin spice latte as much as the next person, but we can’t get behind the high price and overly sweet taste of most pre-made and coffee shop options. So, we make one at home instead. It’s sweet, creamy, perfectly spiced, and ready in five minutes.
Bonus: You don’t even have to get out of your pajamas. Just whisk everything together, and sip away. It’s the perfect pick-me-up to start or get you through a hectic day!

- Coffee Grounds – Feel free to use your favorite coffee grounds or decaf coffee. We love Seven Weeks Decaf Coffee or Yonder Organic Mushroom Coffee. Our favorite collagen is from Yonder. Use the code “HappiHomemade” to save at checkout!
- Pumpkin Pie Spice – We almost always have our homemade pumpkin pie spice on hand, but store-bought blends are totally fine.
- Vanilla Collagen Powder – Our favorite collagen is from Yonder, but any brand you like best will work.
- Half and Half – Whole milk will also work. Or, use a dairy-free half and half if needed.
How to Make a Pumpkin Spice Latte

- Brew coffee. Brew your coffee over pumpkin pie spice in a mug.

2. Mix in the vanilla collagen.

3. Heat and froth the half and half. In the meantime, warm the half and half in the microwave. Then, use a handheld frother to froth the liquid until it’s light and foamy.

4. Serve. Pour the mixture over the coffee, and sprinkle additional pumpkin pie spice on top. Enjoy!

Topping Ideas and Serving Suggestions
Want to make your latte extra decadent? Serve your beverage topped with whipped cream and caramel sauce or chocolate sauce. Or, include a sprinkle of chocolate chips.
Then, enjoy your latte with cinnamon sugar protein donuts or a southwest egg bake for breakfast. Or, treat yourself to an afternoon snack with a slice of easy pumpkin bread or cowboy bread.
Our Top Tips and Tricks
- No frother? No problem! Pour the warmed half and half into the coffee, and stir with a spoon until combined.
- Too sweet? Add half vanilla collagen and half flavorless collagen. Or, use more pumpkin pie spice for a cozier flavor.
- Not sweet enough? Stir in maple syrup, vanilla extract, or a splash of pumpkin spice syrup for more warmth and more sweetness.
- Use real pumpkin. For a stronger pumpkin flavor, whisk in real pumpkin purée.
- Dairy-free. Use almond milk or oat milk, heating the milk as usual.
- Need more caffeine? Use extra-strong coffee or stir in more shots of espresso.
- Make-Ahead. Pre-mix the coffee grounds and pumpkin spice in a jar so it’s ready to scoop and brew each morning.

- 1-2 Tablespoons coffee grounds
- ¼ teaspoon pumpkin pie spice, plus more for topping
- 2 scoops (20 grams) vanilla collagen powder ("HappiHomemade" saves at checkout!)
- 2 Tablespoons half and half
Instructions
- Place the coffee grounds in a reusable K-cup and sprinkle the pumpkin pie spice on top. Close the lid and place in the coffee maker.1-2 Tablespoons coffee grounds, ¼ teaspoon pumpkin pie spice, plus more for topping
- Make 8-12 ounces of coffee in a mug. Mix in the vanilla collagen with the handheld frother or a spoon (but it will take longer to incorporate).2 scoops (20 grams) vanilla collagen powder
- Meanwhile in another mug or 8 ounce glass jar, heat the half and half in the microwave for 20-30 seconds or until hot. Using a handheld frother, froth the half and half for 30 seconds until foamy.2 Tablespoons half and half
- Pour/scoop the frothed half and half into the coffee and sprinkle with additional pumpkin pie spice. Enjoy immediately.
