Cake Batter Ice Cream

This Ninja Cake batter ice cream tastes just like funfetti cake! Made with over 50 grams of protein, it’s easy to make, tastes just like real ice cream, and comes together with four simple ingredients!

We use our Ninja Creami every single day, making recipes like our pumpkin pie ice cream, vanilla ice cream, and strawberry ice cream. We can’t get enough! Our kids love getting to create their own flavors, and we love that it satisfies our sweet tooth with better-for-you ingredients and lots of protein.   • Milk – We use whole milk or 2% for a rich flavor and creamy consistency. However, fat-free Fairlife milk may be substituted for the 2%, with little difference in texture. Substitute dairy-free milk if needed. We recommend a higher-fat milk like cashew milk.
  • Protein PowderVanilla whey protein powder works best for this. We use the Peachie Spoon protein. (Use code: HappiHomemade to save at checkout!) 
  • CollagenYonder collagen is our go-to. (Use code: HappiHomemade to save at checkout!) 
  • Cake Batter Extract – This is what creates the cake-like flavor! We find it in the spice section of our local grocery store. 
  • Optional Mix-Ins – Optional but highly recommended, we include sprinkles and golden Oreos for a funfetti appearance. 

Mix-In Options

Use whatever ingredients you have on hand, or replicate your favorite ice cream flavors! Some tasty options include chocolate chips, chopped nuts, coconut flakes, chocolate frosted brownie pieces, chocolate chip cookie pieces, or cheesecake pieces. 

How to Make Ninja Creami Cake Batter Ice Cream

  1. Combine. Place all the ice cream base ingredients in a Creami container, and mix until smooth. We use a stick blender or handheld frother to make sure everything blends evenly! Freeze overnight.

2. Blend. Thaw at room temperature for a few minutes, and run the Creami twice. Add the mix-ins, and run the device again. Enjoy!

Serving Suggestions

We typically enjoy our ice cream right out of the container. However, it’s also great in a bowl topped with chocolate syrup and whipped cream. Or, scoop it into cones, spoon it between cookies, or use it as a topping with gluten free chocolate waffles

Ice Cream

  • 1 1/2 cups 2% Fairlife milk
  • 1 serving (28-34 grams) vanilla whey protein powder (we use Peachie Spoon, “HappiHomemade” saves at checkout)
  • 1 serving (10 grams) flavorless collagen (we use Yonder collagen, “HappiHomemade” saves at checkout)
  • ¾ teaspoon cake batter extract

Mix Ins (optional)

  • 1 Tablespoon sprinkles
  • Optional: 3 golden Oreos (vanilla sandwich cookies), broken into pieces

Instructions
 

  • Place all ice cream ingredients (NOT mix-ins) in a Ninja Creami pint container and mix with a stick blender until smooth. A handheld frother may be used if it has enough power.
    1 1/2 cups 2% Fairlife milk, 1 serving (28-34 grams) vanilla whey protein powder (we use Peachie Spoon, “HappiHomemade” saves at checkout), 1 serving (10 grams) flavorless collagen (we use Yonder collagen, “HappiHomemade” saves at checkout), ¾ teaspoon cake batter extract
  • Freeze the pint on a level surface in the freezer, with the lid off, for 24 hours (see notes). Freezing with the lid on creates a hump at the top of the ice cream. However, sometimes this happens no matter what.
  • Remove the pint from the freezer and let it thaw for 10 minutes at room temperature or run the sides of the container under warm water for 1-2 minutes. If the top of your ice cream is not flat, scrape down any bumps or uneven texture with a knife (see notes).
  • Place the pint in the outer bowl of the Creami and lock the lid on top. Place the bowl assembly on the Creami motor base, twist the handle right to raise the platform, and lock it in place.
  • Select the Lite Ice Cream function two times. You will need to unlock and lock the Creami bowl in between the two cycles.
  • Use a spoon to create a small hole in the center, about 1½ inches wide. Place the sprinkles (and, if using, the cookies) in the center. Lock the lid into place and select the Mix-In function.

  • Enjoy immediately!

Notes

Ingredient Tips – Fat free Fairlife milk may be substituted for the 2%, with little difference in texture. 
Prep Tips – Don’t overfill the pint container. The ice cream will expand in volume as it spins so don’t worry if it looks like the pint isn’t initially full. While 24 hours is the typical time frame for freezing your pint, once you’re familiar with the process, you can experiment with shorter freezing times and adjust as needed. Depending on freezer temps, you may only need 12-18 hours. If a hump forms on the top of your ice cream while freezing, shave down the bump or unevenness with a knife before processing. Your machine can be ruined if the ice cream is not flat on top. 
Mix-in Tips – Break the cookies into smaller pieces. The Creami will not crush them small enough in Mix-In mode.

    This cake batter ice cream is THEEEEE BEST! I cannot stop making pints of it and enjoying for a high protein meal or healthy dessert. I usually add vanilla sandwich cookies.🤩
