Salsa Verde Shredded Beef

Slow cooker recipes don’t get easier than this salsa verde shredded beef! All you need are three ingredients. Then, sit back as the slow cooker does all the work, and come back to dinner waiting for you. Yay for simplicity!
A family favorite, we make this recipe all year long, finding it comforting enough for the winter but light enough for summer. Use it to make tacos, enchiladas, nachos, salads, and so much more. We promise, it never gets old.

- Beef Roast – We recommend using a large cut with lots of fat marbling, such as a rib roast or chuck roast. The fat will melt down, creating super tender beef. However, any cut of beef will work.
- Salsa Verde – We use medium heat salsa verde, but swap it out for mild or spicy options, depending on your spice preferences.
- Ranch Dressing Mix – We use homemade Ranch seasoning, but store-bought packets are totally fine if you want to save some time.
The Easiest Cooking Method for Beef Verde

- Prepare the beef. Place the roast in a large slow cooker. (Make sure it’s at least a 6-quart!)

2. Combine. Season the roast all over with the Ranch seasoning, and pour the salsa on top.

3. Cook. Cover and cook on low for six hours.

4. Shred and serve. Shred the cooked roast with two forks, and stir it into the pot to soak up the salsa. We find this works well if you let it sit for a few minutes before serving!
Common Questions
Use this meat in all your favorite meals – seriously! It’s great in beef enchiladas, quesadillas, tacos, rice bowls, stuffed poblano peppers, walking tacos, and nachos. Or, use it as a topping for salads or in Mexican rice bowls with guacamole, pico de gallo, or roasted corn salsa.
If you’re lucky enough to have leftovers, you can store them in an airtight container in the refrigerator for 3-4 days. Or, freeze them for up to 3 months!
To serve, thaw in the fridge overnight. Then, reheat in the microwave, a skillet over medium heat, or in a slow cooker set to warm. Add a splash of broth or extra salsa as needed if your beef seems a little dry.

- 2-4 pound beef roast any cut will do
- 2 Tablespoons ranch seasoning mix
- 16 ounces salsa verde medium heat
Instructions
- Place the roast in a 6 quart slow cooker. Sprinkle the ranch seasoning mix over the roast then pour the salsa over ranch seasoning.2-4 pound beef roast, 16 ounces salsa verde, 2 Tablespoons ranch seasoning mix
- Place the lid on the slow cooker and cook on LOW for 6 hours or until the roast shreds easily with a fork.
- When the roast is done, remove any fat and begin shredding the roast with the tines of two forks. When you have shredded all the beef let it sit in the sauce mixture to soak up all the goodness before plating.
- Refrigerate leftovers in an airtight container for up to 4 days.
