Gingerbread Bites (No-Bake)
These no-bake Gingerbread Bites come together with just six simple ingredients for a nutritious snack that tastes like your favorite cookie!
It’s no secret that we love energy bite recipes around here. And during the holiday season, we infuse gingerbread into as many treats as we can like our gingerbread hot chocolate. So, naturally, we had to make gingerbread bites, too!
These little snacks come together in minutes and are made with natural ingredients. They’re perfect for lunchbox snacks, on-the-go breakfasts, or afternoon treats. Plus, they’re so tasty no one will ever believe they’re healthy.
Prepare a large batch at once, and you’ll have the perfect treat to keep you going through the holiday season. Plus, you can wrap up leftovers to give away as tasty gifts. It’s a win-win!

- Almonds – These form the base of the bite, adding a nutty flavor and lots of healthy fats.
- Dates – Make sure to use pitted and dried dates. These provide natural sweetness and act as “glue” holding the bites together.
- Shredded Unsweetened Coconut – We use this both in the balls and on top for a chewy texture.
- Molasses – This is a key ingredient in any gingerbread recipe, providing a sweet, rich, slightly smokey taste.
- Spices – Pumpkin pie spice and a pinch of salt at the classic spiced flavor you look for in gingerbread.

How to Make No-Bake Gingerbread Bites
Before you begin, line a bread pan with saran wrap, and set it aside.
- Combine. Add all the ingredients except the water to the bowl of a food processor. Process on high until a crumbly sticky mixture forms.
Pro-Tip: If the dough does not hold its shape when rolled, add a bit of water until the dough holds its shape.
- Shape. Press the mixture into the prepared loaf pan, smoothing it out evenly.
- Chill. Transfer the pan to the freezer or fridge, and allow it to set and harden.
- Top. Slice the loaf into squares, sprinkle additional shredded coconut on top, and enjoy!

- 1 cup raw almonds
- 1 cup (about 140 g) pitted and dried dates
- 1/2 cup shredded unsweetened coconut
- 2 Tablespoons molasses
- 1 teaspoon pumpkin pie spice
- 1/8 teaspoon sea salt
- 1 Tablespoon water, if needed
Instructions
- Line a 9×5 bread pan with plastic wrap. Set aside.
- Add all ingredients, except water, to a food processor.1 cup raw almonds, 1 cup (about 140 g) pitted and dried dates, 1/2 cup shredded unsweetened coconut, 2 Tablespoons molasses, 1 teaspoon pumpkin pie spice, 1/8 teaspoon sea salt
- Process on HIGH until a crumbly and sticky mixture forms. Take some mixture and see if it sticks together enough to form into a ball. If it does, go ahead and press the mixture into the prepared pan. If not, pulse in a little water to wet the mixture just enough to make it hold together.1 Tablespoon water, if needed
- Place the pan in the freezer for 30 minutes or the refrigerator for 1 hour to allow the mixture to harden. After the mixture is slightly hardened, using the plastic wrap, lift out of the pan. Cut the mixture into squares, sprinkle with additional shredded coconut and store covered in the fridge for up to 2 weeks.
It’s so nice to have healthier treat options to enjoy during the holidays. We love the gingerbread flavor thanks to the pumpkin pie spice and molasses!
