This Easy Egg Roll in a Bowl with coleslaw mix combines and cooks in one skillet in under 30 minutes. With all the flavor of your favorite takeout egg rolls, it’s the perfect quick and easy weeknight meal or meal prep option!

Whole doesn’t love egg rolls? We’ve yet to meet one we didn’t like! However, wrapped up and deep fried, they aren’t exactly the healthiest option. Until now!
This healthy egg roll in a bowl features all the savory egg rolls filling ingredients you love and is wrapper-free. As a result, you get all the goodness in a high-protein, nutrient-rich meal. Trust us, you don’t miss the wrapper!

- Ground Turkey Sausage – Feel free to substitute regular ground turkey, ground beef, ground, pork ground chicken, or even ground venison. Any ground meat will taste great!
- Veggies – To save time, we use bagged coleslaw mix with shredded cabbage and carrots. However, broccoli slaw will also work. Then, we add red pepper, green onions, and garlic for extra bulk and flavor.
- Soy Sauce – Adds a delicious salty, umami taste. We recommend low-sodium soy sauce! If you need to keep this recipe gluten-free, feel free to use coconut aminos or tamari instead!
- Ginger – We use ginger powder, but minced ginger or ginger paste is just fine, too.
How to Make the Best Egg Roll in a Bowl Recipe

- Brown the turkey sausage in a large pan over medium heat.

2. Then, add the coleslaw mix, red pepper slices, the white parts of the green onion, and grated garlic. Sauté until the veggies soften and become fragrant.

3. Stir in the ginger powder and soy sauce, and sauté another few minutes to combine and warm through.

4. Top your egg roll in a bowl mixture with the green parts of the onion, and enjoy!

I used Jennie O turkey sausage, which is 2 points for 2 ozs. All other ingredients are 0 points. So it depends on many servings you make it into. If you make it 4 servings, then it would 4 points per serving.

I made this and I loved it! However that could be because I used spicy ground pork, which is probably not very healthy (there was a lot of grease). I can’t seem to find “spicy ground turkey sausage” in any grocery store. Would I be able to make my own? I can find plain ground turkey. What kind of spices are we talking about?

I am so glad you loved this dish 🙂 If you can find plain ground turkey sausage add crushed red pepper flakes, onion & garlic powder, paprika, salt and pepper, and maybe a little cayenne pepper powder for a little more heat. I have used the plain variety and added these spices and the recipe turned out just as delicious 🙂 I am just all about the easiest and healthiest route so I try to buy the “premade” spicy kind! 😉 Blessings to you! I am always looking for quick recipes and this one looks awesome but i only have ground beef on hand, do you think that will change the flavor profile too much?
Hi Janette! Ground beef will be just fine. I would add some dried red pepper flakes/cayenne pepper/chili pepper to your beef as it browns to give it a little more flavor.
