Plus, made in a large skillet, it’s the perfect, fuss-free option for a crowd. Higher in protein than your average frittata recipe, it’s guaranteed to leave you feeling full and satisfied until lunch. 

What is a Frittata? 

A frittata is a type of Italian egg dish that’s similar but not quite the same as an omelet or quiche. Typically, frittatas consist of some combination of eggs, meat, cheese, vegetables, herbs, and spices. They begin cooking on the stovetop and are finished in the oven.

  • Eggs – A must in any frittata recipe! 
  • Bacon – Feel free to use turkey bacon if preferred. Cut the bacon into strips before you begin.
  • Onion – We use yellow onion for a slightly sweeter flavor, but white onion will also work. 
  • Greek Yogurt – This creates a softer, creamier consistency and adds a boost of protein. Sour cream, half and half, heavy cream, or whole milk will also work if preferred. 
  • Parmesan Cheese – For the best results, buy a block of parmesan and grate it yourself. 
  • Salt and Pepper – Adjust to taste.

How to Make This Easy Bacon Frittata Recipe

  1. Prepare. Preheat your oven, and heat a 10-inch cast iron pan or oven-safe pan over medium heat. 
  2. Cook. Grease the pan with cooking spray or olive oil, and sauté the onions just until they’re starting to brown. Then, add the chopped bacon, and continue to cook until it’s crispy. 
  3. Whisk the remaining ingredients. While the onions and bacon cook, whisk the eggs, parmesan, Greek yogurt, salt, and pepper in a medium bowl. 
  1. Cook. Pour the egg mixture into the pan, and do not mix! Instead, let the mixture cook until the eggs set slightly. 
  2. Bake. Transfer the pan to the oven, and bake until the center is set. It’s okay if it isn’t browned! 
  1. Garnish. Sprinkle your bacon frittata with shaved parmesan, chives (or green onions), and more bacon, and enjoy warm! 

How to Store and Freeze the Bacon Frittata

  • Store leftovers in an airtight container or covered with aluminum foil in the fridge for up to 2-3 days. 
  • Freeze your frittata for up to 4 months! To do so, allow it to cool completely. Then, wrap it with plastic wrap followed by aluminum foil. Thaw in the refrigerator overnight. 
  • Reheat leftovers in the microwave or in the oven at 350 degrees Fahrenheit just until warmed through.

What’s the difference between a frittata and a quiche? 

The primary difference is that a frittata doesn’t have a crust and a quiche does. A quiche is also cooked entirely in the oven and has a richer, more custardy texture. 

What’s the difference between a frittata and an omelet?

Ingredients

  • 1 small onion, diced into bite-sized pieces
  • 6 strips bacon, diced into bite-sized pieces
  • 12 eggs
  • 1 cup shredded Parmesan cheese
  • 1/2 cup plain Greek yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 350F.
  • Heat a 10 inch cast iron pan or oven safe pan over medium heat on the stove top. Spray the pan with non-stick cooking spray. Add the chopped onions and sauté for 5 minutes or until they are starting to brown.

  • Add in the chopped bacon and continue to cook for 3-5 minutes until the onions are browned and bacon is cooked through.

  • In a large mixing bowl, whisk together the eggs, Parmesan cheese, plain Greek yogurt, salt, and pepper.

  • Pour the egg mixture over the onion and bacon in the cast iron pan. Do not mix! Over medium heat, cook the frittata on the stove top for 3 minutes.
  • Place the whole pan in the preheated oven and bake for 15-18 minutes or until the center is just set. Typically, the middle should be not be wet to the touch, but ever-so-slightly jiggly. The frittata doesn't need to be browned on top and will continue to cook even when taken out of the oven as it cools. A good frittata will have a custard like texture and not be over baked. 
  • Top finished frittata with shaved Parmesan, chives, or additional cooked bacon. Store leftovers in an airtight container in the fridge for up to 3 days.

Ingredient Tips –Turkey bacon can be used in place of regular bacon. If so, spray the pan with additional cooking spray (over the sautéed onions) when adding the turkey bacon to the pan. Feel free to substitute the dairy in this recipe with whatever you have on hand. The most unctuous frittata should be made with full-fat dairy not skim or fat-free. Other whole food substitutions such as sour cream, half & half, heavy cream, or whole milk will all work well.
