Festive Christmas Energy Bites, No-Bake of Course!

If there’s one thing for certain, it’s that we love energy bites around here! With options like no-bake PB&J energy bites, Valentine’s Day no-bake energy bites, peppermint cocoa energy bites, and piña colada energy bites, we’ve got a flavor for every holiday and occasion. 

Of course, we include Christmas in that, too, and these festive bites might be our favorite of all time. The festive M&Ms resemble ornaments, and we call the shredded coconut “snow,” which our little ones love. 

With minimal prep time and simple steps, they’re virtually failproof and are great to prepare in advance. Enjoy these bites for on-the-go breakfasts, lunchbox treats, after-school snacks, or festive desserts. Just be warned – they never last long! 

Ingredients You’ll Need

  • Old-Fashioned Oatmeal – Do not substitute steel-cut or quick oats, or the texture won’t be the same! If needed, look for certified gluten-free oats to keep these bites gluten-free. 
  • Unsweetened Shredded Coconut – Make sure it’s finely shredded, or your bites are likely to fall apart. 
  • M&Ms – Of course, any M&Ms will do, but Christmas M&Ms add the perfect festive touch! Mint M&Ms add a fun flavor variation, too! 
  • Hemp Seeds – Ground flax seed will also work if preferred. 
  • Peanut Butter – Feel free to substitute any other nut or seed butter you like best. Just be sure to use a creamy variety! 
  • Honey – This adds natural sweetness and acts as a “glue,” allowing the bites to hold their shape. Maple syrup may also work, but we have not tried it.

How to Make No-Bake Christmas Energy Bites

  1. Combine. Add all the ingredients to a large bowl, and mix to combine. 
  1. Portion. Use a spoon or small cookie scoop to portion about a tablespoon of “dough” at a time, and roll it into a ball. Repeat until all the oat mixture has been used. 
  2. Chill. Transfer the bites to the fridge or freezer to chill and set, and enjoy! 

Pro-Tip: If your oat mixture is too sticky, add more oats until it holds its shape. Or, chill the mixture in the fridge for 30 minutes before rolling it into bites. 

Common Questions 

How long do these bites last? 

Stored in an airtight container, leftover Christmas energy bites will stay fresh in the fridge for up to 1 week. 

Can I freeze this recipe? 

Yes! Freeze these bites for up to 3 months. We recommend flash-freezing them by placing them on a baking sheet and freezing them until solid before transferring them to a sealable bag or airtight container. This prevents them from clumping together! 

Can I add protein? 

We haven’t tested it but think it would work! You’ll likely just need to add more nut butter or honey in order for the bites to hold their shape.

Ingredients

  • 2 cups old fashioned oatmeal
  • 1/2 cup finely shredded unsweetened coconut
  • 1/2 cup Christmas M&Ms, coursly chopped or crushed
  • 1/2 cup peanut butter or any nut butter
  • 1/2 cup honey
  • 1/4 cup hemp seeds or ground flax seed

Instructions

  • In a large mixing bowl, add all the ingredients. Mix together with a spoon until combined.
    2 cups old fashioned oatmeal, 1/2 cup finely shredded unsweetened coconut, 1/2 cup Christmas M&Ms, coursly chopped or crushed, 1/2 cup peanut butter, 1/2 cup honey, 1/4 cup hemp seeds or ground flax seed
  • Scoop out 1 Tablespoon of batter at a time. Press and squeeze the batter together with your hands then shape/roll into balls (see notes). ***OR press the mixture into a bread pan lined with plastic wrap, refrigerate for at least 1 hour (or freeze for 1/2 hour), then remove the batter from the pan and cut into bite-sized squares.
  • Store bites in an airtight container in the fridge for up to 2 weeks or the freezer for up to 3 months.

Substitute Tips – The peanut butter may by substituted with any nut butter or nut-free seed butter. We have used both regular green and red holiday M&Ms and Chocolate Holiday Mint M&Ms  in this recipe. Both flavors tasted amazing!
Prep Tips – If the batter is too sticky, add more oats or the chill mixture in the fridge for 30 minutes and then roll into bites. If the batter won’t press and roll into balls, add more nut butter and honey. Pressing and squeezing the batter together to roll into bites is the key. The batter won’t simply “roll” into balls like cookie dough batter.

    Christmas goodies have my heart and these are no exceptional! They fact that they only use a handful of ingredients and are no bake make them even better. We always make a double batch to freeze for later or share with friends.

    I am currently working on these Christmas bites but I am having trouble. Lol for some reason the mixture won’t stick together to form a ball. Help!!

    1. Hi! You probably need to add more peanut butter and honey. Depending on the brands of products used, sometimes we have to adjust the amount of ingredients here and there.
