Is there anything better than the aroma of sweet roasted nuts as you wander through a mall or Christmas market or walk around a ball game? There’s just something about the rich taste and irresistible smell that takes us right back to our childhood and leaves us practically drooling.
However, you don’t have to wait for your next excursion to enjoy this delectable treat! As it turns out, it’s pretty darn easy to make at home.
It’s one of our favorite holiday treats and is loved by all our family and friends! In fact, our homemade candied nuts are so popular that we make several batches to give away as gifts during the holiday season. Transfer them to a sealable jar, wrap it up with a bow, and it’s super cute.
Just be warned that they’re seriously addicting and never last long!

- White Granulated Sugar – Feel free to use a sugar substitute like monk fruit sweetener to keep these nuts low-sugar.
- Ground Cinnamon – Adds the perfect touch of spice!
- Salt – This creates the perfect sweet and savory combo and enhances the flavor of the rest of the ingredients.
- Egg Whites – These help the seasonings cling to the almonds without impacting their taste. Vanilla Extract – Use pure vanilla extract for the best flavor!
- Almonds – Make sure to use whole raw almonds, not salted or roasted varieties.
Pro-Tip: If you want to add even more flavor, feel free to add a dash of cayenne pepper for a touch of heat.

How to Make This Homemade Candied Almonds Recipe
- Prepare. Preheat your oven, and line a large rimmed baking sheet with parchment paper or a silicone mat.
- Combine the dry ingredients. Whisk the sugar, cinnamon, and sea salt in a small bowl.
- Whisk the wet ingredients. In a large bowl, whip the egg whites and vanilla with a fork until frothy.
- Coat. Add the almonds to the egg white mixture, and stir to coat them completely. Then, sprinkle the cinnamon sugar mixture over the almonds, and stir to combine and coat.
- Bake. Spread the spiced almonds in an even layer on the prepared baking pan. Bake for one hour, stirring every 15 minutes.
- Cool. Give the almonds a final stir, and set them aside to cool completely. Enjoy!
Common Questions
If your almonds aren’t crunchy, it’s likely they weren’t baked long enough or just haven’t cooled completely yet. You’ll know they’re finished baking when they no longer look wet on the baking tray.
Stored in an airtight container leftover cinnamon roasted almonds will stay fresh at room temperature for up to 2 weeks or in the fridge for up to 2 months.
Yes! Once cool, you can transfer the nuts to a sealable bag, and freeze for up to 6 months. Thaw at room temperature or in the fridge when you’re ready to eat. Feel free to pop them in the oven for just a few minutes to warm them back up. Just be careful not to let them burn!

- 1 cup white sugar
- 1/2 Tablespoon ground cinnamon
- 1 teaspoon salt
- 2 egg whites or 4 Tablespoons egg whites
- 1 Tablespoon vanilla extract
- 4 cups (21 ounces or 600 g) whole raw almonds
Instructions
- Preheat the oven to 250 degrees F. Place parchment paper or a silicone baking mat (see notes) on a large rimmed baking sheet.
- In a small bowl, combine the sugar, cinnamon, and sea salt. Set aside.1 cup white sugar, 1/2 Tablespoon ground cinnamon, 1 teaspoon salt
- In a large mixing bowl, whip the egg whites and vanilla with a whisk until frothy (about 1 minute).2 egg whites, 1 Tablespoon vanilla extract
- Add the almonds to the frothy egg white mixture and stir until evenly coated.4 cups (21 ounces or 600 g) whole raw almonds
- Sprinkle the cinnamon sugar mixture over the almonds and stir until the almonds are evenly coated.
- Spread the almonds evenly on the prepared baking sheet. Bake for 1 hour, stirring every 15 minutes.
- After one hour remove the almonds from the oven, give them a final stir and let them cool on the baking sheet.
- Store in an airtight container at room temperature for up to 2 weeks, 2 months in the fridge or up to 6 months in the freezer.
