Sausage and Potato Bake

This sausage and potato bake is our go-to dinner on busy days. With protein, veggies, and plenty of cheese, it’s hearty and filling with a savory, smoky flavor we adore. All you need is 20 minutes of prep time, and the oven does the rest!

This might be the easiest recipe we’ve ever made! Think of it like a one-pot meal just in a casserole dish. All we do is combine the ingredients and pop them in the oven. The sausage infuses the veggies with savory flavor, meaning even our little ones don’t complain. 

The cheese topping doesn’t hurt, either. It’s filling. It’s nutritious. And it’s just so dang tasty. This sausage and potato bake will be a new family favorite for sure.

  • Veggies – Russet potatoes, frozen cut green beans, onion, and garlic form the bulk of the casserole, adding savory flavor and lots of nutrients. Substitute any Yukon Gold or red potatoes, if preferred! We think fresh green beans would also work, but we haven’t tested them. 
  • Sausage – We love turkey smoked sausage slices, but any smoked sausage tastes great. 
  • Spices – Salt, pepper, and paprika enhance the savory flavor and add just a touch of spice for extra depth. It doesn’t actually make the casserole spicy! 
  • Broth – This helps everything cook and adds savory flavor. We almost always have homemade chicken broth on hand, but store-bought chicken or vegetable broth is totally fine. Look for low-sodium varieties to prevent your casserole from being too salty. 
  • Cheese – We love topping this sausage potato bake with freshly grated Parmesan cheese, but you could also use mozzarella, provolone, cheddar, or pepper jack. 

How to Make This Sausage and Potato Bake in 3 Easy Steps!

  1. Combine. Add all the ingredients except the broth and cheese to a greased baking dish, and mix to combine. Then, pour the broth evenly on top.

2. Bake. Cover the pan tightly with aluminum foil, and bake. Uncover at the very end to allow the potatoes to crisp.

3. Serve. Sprinkle the Parmesan cheese on top, and enjoy warm! 

Serving Suggestions 

Honestly, this recipe is so filling we don’t typically even need to add a side. However, you can never go wrong with garlic cheddar biscuits, sourdough bread, or a light salad such as our Greek mason jar salad or a spinach & roasted eggplant salad

Ingredients
  

  • 2 pounds or about 5 russet potatoes, peeled and diced into 1/2” or smaller pieces (see notes)
  • 2 (13 ounce) turkey smoked sausages, sliced
  • 12 ounces frozen cut green beans
  • 1 onion, diced
  • 2 teaspoon minced garlic
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup chicken broth (beef or vegetable broth may be used)
  • ½ cup shredded Parmesan cheese

Instructions
 

  • Preheat the oven to 400F. Spray a 9×13 baking dish with non-stick cooking spray.
  • Add all the ingredients EXCEPT the broth AND parmesan cheese to the prepared baking dish. Mix well with a spoon (or 2 spoons) until all the ingredients are evenly distributed.

  • Pour the broth over the baking dish.
    1/2 cup chicken broth
  • Cover the pan tightly with aluminum foil. Bake for 1 hour covered and then uncover and bake an additional 15 minutes to crisp up the potatoes and sausage.
  • Remove the dish from the oven and sprinkle the top with shredded Parmesan cheese. Serve warm.
    ½ cup shredded Parmesan cheese
  • Store leftovers in an airtight container in the fridge for up to 4 days.

Notes

Ingredient Tips – The potatoes are weighed before peeling. We don’t always peel the potatoes when making this meal for our families, but it looks better in the photos. 😉 Be sure the potatoes are no larger than ½ inch or the cook time will need to be extended. Russet, Yukon or red potatoes can be used in this recipe.
