We don’t know about you, but breakfast can get a little boring for us. Typically, we go for smoothies or a quick veggie and egg scramble. However, when we get bored, we like to switch things up with easy recipes like this healthy banana split. 

It features various breakfast staples like fresh fruit and yogurt, but the presentation makes it so much fun! Plus, our kids love getting to mix and match their own toppings.   • Banana – Look for a ripe banana that’s still fairly firm so that it holds its shape under the weight of the other ingredients. Save the mushy bananas for banana bread!
  • Yogurt – We use plain Greek yogurt, but you can also substitute a flavored yogurt or even cottage cheese.
  • Fresh Berries – We like to use a combination of strawberries, blueberries, blackberries, and raspberries.
  • Almond Butter – Smooth or chunky versions taste great! Or, substitute peanut butter, cashew butter, or even tahini.
  • Granola – We prefer to use either our homemade French toast granola or salted dark chocolate granola, but any store-bought brand will also work.

How to Make a Healthy Breakfast Banana Split

  1. Prepare the banana. Peel the banana and slice it in half lengthwise. Then, place each piece side by side in a shallow bowl or plate.

2. Layer. Top the banana halves with yogurt. Then, add the berries, followed by the nut butter and granola. Enjoy!

Tip: If your nut butter is not “pourable,” scoop it into a small bowl and microwave it for about 15 seconds or until you achieve a drizzly consistency.

Feel free to use whatever you have on hand! Chopped nuts, coconut flakes, whipped cream, chocolate chips, sprinkles, or chocolate sauce all make for fun additions.

No, this recipe is best served right away. If left to sit, the fruit will become soggy and start to oxidize.

Ingredients
  

  • 1 banana, cut in half lengthwise
  • 1/2 cup plain Greek yogurt or your favorite yogurt flavor
  • 1 cup fresh berries (strawberries, blueberries, raspberries, blackberries)
  • 1-2 Tablespoons almond butter or nut butter of choice
  • 1/4 cup granola

Instructions
 

  • Peel the banana and cut it in half lengthwise. Place the 2 banana pieces side by side in a shallow bowl or on a plate.

  • Top of the bananas with the yogurt.

  • Spread the berries on top of the yogurt and drizzle with the almond butter. If your almond butter is not "pourable", scoop it into a small bowl and heat for 15 seconds in your microwave.
    1 cup fresh berries (strawberries, blueberries, raspberries, blackberries), 1-2 Tablespoons almond butter
  • Sprinkle the banana split with the granola and eat immediately.

Notes

Ingredient Tips – If using plain Greek yogurt, you can stir in 1/2 teaspoon vanilla extract, if desired. We don’t typically do this, but if you prefer flavored yogurt this is a nice option or you can use your favorite flavored yogurt.
Toppings Tip – Use any berries, granola, or almond butter on top of this banana split. The topping choices are endless! Try peanut butter and chocolate chips for more of a dessert option or pineapple, mango and coconut shavings for a tropical version.
