This Turkey Sausage Egg Casserole recipe features layers of ground turkey sausage, fresh veggies, cheese, and eggs. Baked until fluffy, it’s savory, hearty, and perfect for meal prep!

In our homes, mornings are always hectic. So, we’re always looking for ways to make them a little easier. And this turkey sausage breakfast casserole recipe is one of our go-to meal prep options for a breakfast we can quickly reheat before heading out the door. 

Loaded with savory flavor and plenty of cheese, it’s super kid-friendly. And it’s so tasty they don’t even realize we pack in lots of veggies. Prepare a big batch in advance, reheat individual portions in the microwave, and enjoy! Future you will thank yourself for preparing it now.

  • Ground Turkey Sausage – Feel free to use chicken sausage or pork sausage. Or, use regular ground turkey, ground beef, or ground chicken if preferred. 
  • Veggies – Onion, fresh spinach, and cherry tomatoes add a pop of color and lots of nutrients. Feel free to mix and match any veggies you have on hand. Bell peppers, mushrooms, asparagus, etc. all work great in this delicious turkey sausage egg bake!
  • Cheese – We love parmesan cheese, but you could substitute cheddar cheese, mozzarella cheese, goat cheese, or any cheese you like best. 
  • Eggs – You can’t have an egg casserole without eggs! If you want to keep the fat content a little lower, feel free to use egg whites instead. A good rule of thumb is to allow for two egg whites for every whole egg. 
  • Half and Half – This creates a richer flavor and a creamier consistency. Milk will also work if preferred.
  • SeasoningsGarlic powder, mustard powder, salt, pepper, and cayenne pepper create a savory flavor with just a kick of heat.

How to Make This Turkey Sausage Egg Casserole Recipe

Before you begin, preheat your oven to 400 degrees Fahrenheit. Then, grease a 9×13 baking dish with cooking spray. 

  1. Brown. Heat a large sauté pan over medium heat, and brown the turkey, breaking it into pieces as it cooks. Transfer the sausage to the casserole dish. 
  2. Sauté. In the same pan, sauté the onions until soft. Then, add the spinach, and let it wilt. Spread the mixture evenly over the cooked sausage. 
  3. Layer. Top the veggies with the chopped tomatoes, and add a sprinkle of cheese. 
  4. Whisk the egg filling. In a large bowl, whisk the eggs, half and half, and seasonings until smooth. Pour the mixture evenly over the meat and veggies. 
  1. Bake. Transfer the baking dish to the oven, and bake until the center is puffed up and the edges are browned. Enjoy! 

Serving Suggestions with Turkey Sausage Egg Casserole

Of course, you can serve this turkey sausage and egg casserole on its own. However, we love to add toppings like salsa, sour cream (or Greek yogurt), sliced avocado, guacamole, and green onion. 

Then, add sides like fresh fruit, bacon, hash browns, dairy free protein pancakes, or cinnamon & sugar protein donuts. Don’t forget the cold brew, too!

Common Questions

What’s the difference between a frittata and an egg casserole? 

There are slight differences in the ingredients typically included. However, the primary difference is that frittatas like our parmesan bacon frittata cook in a cast-iron pan on the stove and then are briefly baked in the oven. On the other hand, egg casseroles feature sautéed ingredients that are layered in a dish and baked for a longer period. 

How long do leftovers last? 

Stored in an airtight container, leftover breakfast casserole with turkey sausage will stay fresh in the fridge for up to five days. 

Can I freeze this recipe? 

Yes! This turkey sausage egg casserole makes for a fabulous freezer meal. Once cool, transfer leftovers to a freezer-safe container, and freeze for up to three months.

  • 16 ounces ground turkey sausage
  • 1 onion, diced
  • 4-5 cups fresh spinach
  • 1 cup cherry tomatoes, quartered
  • 1 cup shredded Parmesan cheese
  • 12 eggs
  • 1/4 half & half
  • 1 teaspoon garlic powder
  • 1 teaspoon mustard powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper

Instructions
 

  • Preheat the oven to 400°F. Spray a 9×13 pan with nonstick cooking spray.
  • In a large saute pan over medium heat, add the ground turkey and cook until browned or about 5 minutes. Pour the browned sausage into the greased 9 x 13 pan.

  • In the same sauté pan over medium heat, add the onion and sauté until softened or about 5 minutes. Add the spinach and wilt down for 1-2 minutes. Pour the mixture over the ground sausage.

  • Then top with the chopped tomatoes and sprinkle the shredded Parmesan cheese over the tomatoes.
    1 cup cherry tomatoes, quartered, 1 cup shredded Parmesan cheese
  • In a large bowl, whisk together the eggs, half-and-half, garlic powder, mustard powder, salt, black pepper and cayenne pepper. Pour the egg mixture over the pan of meat and veggies.
    12 eggs, 1/4 half & half, 1 teaspoon garlic powder, 1 teaspoon mustard powder, 1 teaspoon salt, 1 teaspoon ground black pepper, 1/8 teaspoon cayenne pepper
  • Bake for 30 minutes or until the middle of the bake is puffed and the edges are browned.
  • Store leftovers in the fridge in an airtight container for up to 5 days.

Notes

Substitute Tips – Ground turkey sausage can be substituted with ground pork sausage as well as half and half substituted with whole milk. 
Storage Tips – Store in the freezer in an airtight container for up to 3 months.

      1. Hi Kristie! You can eliminate the cheese altogether and it will still be delicious or try substituting nutritional yeast. I find it is a great replacement in soups and on popcorn in lieu of cheese 🙂
